Sugar Free Cupcakes

Today I baked something I had never baked before. Hard to believe, I know? I’ve baked thousands of cupcakes over the years and of all of them, today something new popped out of my oven!

Sugar free cupcakes emerged at the request of a customer who recently has been diagnosed a diabetic. Having received this request I felt it was time (perhaps overdue?) to bake a sugar free cupcake. I had the idea earlier this summer, June 2012, to try a sugar free variety and never really got around to it. Today however I did – and made a Sugar Free Peanut Butter Chocolatecupcake. This cupcake is delicious, fluffy and flavourful. While people who are sensitive to blood sugar levels are keen to choose a sugar free cupcake, I hope this cupcake will be a hit with others too. It is certainly a lower calorie option, packing tons of flavour with a clear conscience.

Sugar Free Peanut Butter Chocolate

I was so pleased with the turnout, I decided to enter the ingredients into a recipe nutritional calculator and learned this sweet treat’s stats:

Serving Size: 1 Sugar Free Peanut Butter Chocolate cupcake (frosted)

Calories: 227

Sugar: 2.1g

Fat: 19 g

Carbohydrates: 12.1 g

Protein: 3.9 g

Cholesterol: 32.7 mg

Sodium: 170 mg

Dietary Fiber: 1.1 g

All in all – this cupcake is a relatively lower calorie, sugar and fat option for those with dietary restrictions or preferences. It does contain eggs, buttermilk, all purpose wheat flour and other ingredients – so it is not a gluten free or vegan option. However, while it is not 100% sugar free, it is a minimal amount, and sweetened strictly with Splenda. There is absolutely no white granulated or powdered icing sugar in this cupcake at all. The only sugar contributing to it’s statistics is from the peanut butter. But to be clear, there is only 2/3 cup of peanut butter divided between 47 servings – so relatively very little. From those I’ve spoken to, many people who have sugar free diets do eat peanut butter, so depending on your diet, this could be an option for you.
